30 Minute Dinners: Thai Steamed Salmon

Tasty dinners can be quick, easy and nutritious! A busy lifestyle shouldn't be an excuse to avoid cooking dinner. If you've already tried the Seafood Lasagne recipe, then here is another great source of essential omega-3 fats. This Thai Salmon recipe isn't just a quick and simple meal to prepare, it's healthy too, and full of flavour! Try this recipe for two, or halved if you're cooking for one. It's perfect for a busy weeknight after work.

Ingredients

2 x salmon fillets
1 clove garlic, crushed
Juice of 2 limes
1 tbsp hoisin sauce
1 tbsp fish sauce
1 tbsp soy sauce
1 tsp chilli flakes (optional)
1 bunch coriander, roughly chopped

To serve

1 cup rice
Steamed vegetables

1  Place the salmon fillets in a steamer.

Mix together the garlic, lime juice, sauces and chilli flakes.

Pour the mixture over the salmon and steam for 8-10 minutes, until the fish is cooked.

Sprinkle with fresh coriander on top and serve with a side of steamed rice and vegetables of your choice (I like mine with broccoli or bok choy).

And that's it! Enjoy.
